Double Layer Cake

Ingredients

2 x NuMe “Not so Naughty” brownie mix
6 x eggs
1 cup olive or coconut oil
2 teaspoons of vanilla essence
500ml cream
50g xylitol / erythritol/ stevia
Assorted fruits and berries for layering and decoration
Melted dark chocolate

    Instructions

    Step 1: Beat all 6 eggs with oil and vanilla essence
    Step 2: Add the 2 premixes and combine
    Step 3: Split the mixes into 3 equal portions
    Step 4: Place each portion in each lined, round baking tin (if you only have one baking tin, bake each layer separately)
    Step 5: Place in the oven at 180 degrees for 15 minutes
    Step 6: Remove and cool
    Step 7: Beat cream and xylitol together till soft peak stage
    Step 8: Cut and prepare fruit and berries
    Step 9: Place 1 layer of baked brownie on a plate and add a 3rd the cream and fruit
    Step 10: Then add 2nd layer with the another 3rd of cream and fruit
    Step 11: On the last layer, spread the last portion of cream over the top and lay remaining berries and fruit carefully to decorate the cake -Melt chocolate and use a spoon to drizzle on the top and sides of the cake
